Each of these 3 fillet knives is furnished with a sheath and features Dymondwood handles. With each of our knives, you should run out of fish before the knife runs out of edge.
Many of our clients have discovered that our fillet knives work well for boning larger game and serve them well in their kitchens (especially the Standard and Panfish models). Also, due to the scarcity of Sambar Stag - in particular, pieces large enough to fit fillet knives - we seldom have our fillet knives available with Sambar stag as a handle option. However, if you contact us and are willing to wait several months, we will do our best to fulfill your request for Sambar Stag on any of these 3 fillet knives.
The Saltwater model (top) is the largest fillet knife we make. The blade is 9" in length, with overall length at 14 1/2".
The Standard Fillet knife has a 6 1/2" blade, with overall length of 11 1/2". This is a great fillet, boning or carving knife and routinely fillets several hundred 1-2 lb. fish (up to 125 walleye) without resharpening.
The Panfish fillet has a 4 1/2" blade, and overall length of 9 1/2". A great knife for small fish, as well as boning and putting up meat for large game hunters.
